You can’t define it, as a notification template can vary in its size, as it uses codes that can return longer or shorter text. If you would like to have one part, remove the information that is not entirely necessary, so you could have an estimative maximum message of 160 characters.
For example:
Dear Customer,
This is a confirmation that you have booked Service A at 07 June at 13:00.
Company Name
Dear {client_name}.
This is a confirmation that you have booked {service_name} on {appointment_date} at {appointment_time}.
{company_name}
