I want to be making sites all originally (i.e. not from pre-made templates), so I figured I'd stick with Gutenberg. In a previous post, I was told that Elementor Free is slow and limited. What are your thoughts on using a Gutenberg/Spectra workflow?

Just stick with Gutenberg.
I’d take spectra over elementor… But spectra is insanely bloated now from what it started as years ago, and it doesn’t look like that trend is going to stop, so what edge it gave you over a full blown pagebuilder is more narrow.
