Typically, the error There was a problem connecting to the Stripe API endpoint arises when cURL requests fail to function properly. These requests might cease to work for various reasons related to hosting, the more common reasons are:
• The server may be running outdated versions of PHP and the cURL library.
• The server’s memory limits might not be sufficiently high.

Per the comment above, I also was able to confirm the problem is in curl.
[0] => cURL error 28: SSL connection timeout
The cause is not clear however as this is most likely a server issue, I’ve found two useful articles that can help with troubleshooting the issue:

You may also contact your hosting provider about this as I can see your site is part of a multisite network.

Okay thanks so much for finding that. It’s so strange – hosted with GoDaddy and it just stopped working from one day to the next with no explanation. I’ll work with them to see if I can figure out how to resolve this. Thanks again!
