I do not have this issue. No beta installed for me.
I actually downloaded the plugin zip file from here as well to check and in the header comment section of mollie-payments-for-woocommerce.php it says this:
"/**
* Plugin Name: Mollie Payments for WooCommerce
* Plugin URI:
* Description: Accept payments in WooCommerce with the official Mollie plugin
* Version: 7.3.8-beta
* Author: Mollie
......"So it is definitely in there…

WordPress.org cached a package with the wrong version number (only the version number and nothing else) after updating the stable tag.
@darkallman So only the first few downloads may have been delivered with a version that declares 7.3.8.-beta instead of 7.3.8 but any new download should result in the correct version.
