Someone contacted me to create a website for their business. They sell CBD products online, however they do not have a license to sell. I understand that they may get into legal trouble but will I get into legal trouble for creating this website? Is there something I can add to the contact to ensure I won’t be involved legally?

Honestly, I’d turn it down until they were officially licensed. A possible work-around is to build out the site, but only launch it once they are licensed.
