We understand your concerns about the transition to block-system editing. This change is meant to make the platform more user-friendly, but we appreciate that it may pose challenges for developers used to our legacy system.
In order to override templates, you can still use hooks and filters. However, if you prefer the legacy templating system, you can disable the block editor for WooCommerce pages. To do this, you can use a plugin such as the ‘Disable Gutenberg‘ plugin.

Another thing is that woocommerce keeps strange cache on the template overrides and I have to switch to another theme and switch back to refresh the override templates that woocommerce sees. The clear template cache tool doesn’t work.
