When I double space after a “-” within a paragraph wordpress is forcing the paragraph to become a list item. I need the dash instead of the original circle style it applies. I’ve tried applying some CSS to in the advanced section but can’t find a fix. I’m fairly new to WordPress so I’m sure there’s something I’m missing.

Sounds like you have something that has enabled markdown on your site. One plugin that comes to mind that does this is Jetpack.
