Workshop booking form setup

I’m trying to wrap my head around making a workshop/course booking form on my client’s website.Basically, they have about 6 different workshops on a weekly/bi-weekly basis and I’d like to make it possible for customers to sign up and pay directly through the website. So firstly, I want to allow users to select their preferred date and also allow my clients to add more timeslots once I’m done with the project.

After form submission, it would be great if:

* The user can be transferred to a non-stripe/PayPal payment gateway, my client can’t use stripe for the time being. (below minimum annual revenue for VAT registration )
* I could automate it so that the user details get put into an excel spreadsheet
* The user gets an email sent automatically with all prerequisites for the workshop (files & etc need to be prepared in a certain way)
* Possibly have some kind of automatic slot management system that would fill in empty spots for the course; example: there are 5 spots left for the course next Friday. Every time a payment get processed successfully/the user completes the payment flow the spot counter goes down. There’s no need to actually display the available spots for the users, but it would be cool if the option for that date becomes unavailable once the spots are filled up.

I’ve looked at forminator and events manager, but I’m not certain that those are the right solutions for my issue and I’d like to take your suggestions.
