Any recommended workflow for theme redesign on site that’s accepting live orders?

I’m curious if there’s a smooth workflow on creating a new theme for a site that’s live and accepting orders?
This issue is once the local machine work of creating / tweaking / testing a new theme is done, if you’ve uploaded any new image, changed post content or creating new post types you can’t carry over the database that contains those changes as you’ll lose the orders.

I guess hoping there is a reliable plugin for import/export of your orders is the only option?

You are working on a theme, it should be independent of the differences between the data in the live, staging or production database.
