Thanks for reaching out. Here in WordPress.org our free version of the Canada Post plugin doesn’t offer a custom origin feature. We do have it in our PRO version.
However, currently you can set it only for each shipping method, not based on a specific vendor (in a multivendor setup with Dokan or another 3rd party plugin).
I did pass the idea to our team, so if we decide to implement it, you’ll see it on our PRO version product page.
