Not part of the woocommerce team but have you tried updating via CLI?
The update failed on me as well.
You can try running the following commands:
wp plugin update woocommerce
wp plugin activate woocommerce
wp cache flush
Alternatively you can also try via ftp or via plug Add new plugin.
Thank you for the suggestions…. I logged back in to try your steps and now it is already updated. Going to close this as solved as I no longer have this issue.
