Getting stuck changing to a new theme – am I missing something?

So I’m looking after a site hosted with Bluehost. It uses a very old theme that I want to replace with Twenty Twenty-Three. That theme is installed so I click Activate and a message tells me to go to Jetpack Boost to regenerate my Critical CSS, which I do. I then go to ‘Appearance > Editor’ and create templates. These display as I’d expect in the Templates Editor, so far so good. I go to my existing pages and change their attributes to select the new templates. But when I view the pages they look horrid, as if the CSS is not loading properly. Or at all, really. I click on ‘Caching > Purge this page’, but that doesn’t make a difference. What am I missing?
