Google fonts and GDPR

Ive read some cases about using Google Fonts being a GDPR breach, unless you host them yourself, or you have a cookie popup with the option to decline it.

Im a bit confused by this, because i always decline cookies if i can, yet ive never seen fonts being changed because of it? Have a hard time believing all pages ive visited have self-hosted.

So how are you all staying complient?
