This plugin offers two Google Pay integrations, one is the direct integration called the Google Pay Gateway, and the other is through the Payment Request Gateway. It’s up to you which integration you decide to go with.
The direct integration is more flexible because it’s supported on several browsers including Chrome, Firefox, Edge, and Safari. It’s not just limited to Chrome. If you only want GPay to show on Chrome and no other browsers, then you should use the Payment Request Gateway to offer GPay.
