Gutenberg On Certain Templates?

Hi experts,

So, our site is a custom built theme using ACF components. I understand the appeal, but these in particular are very limited, especially for building out our desired landing pages.

Is there way to enable the fancy Gutenberg/block editor on SOME templates/pages. Some maybe we could have a special template we use just for certain pages where we want to utilize gutenberg instead of the ACFs?

We have a (sorta) dev/guru on the team, and he’s good, but I want to post here to make sure I’m not asking an incredibly stupid question that is going to make him think less of me.
