Additionally, it would be advantageous to have the capability to generate a Category Layout.
This would be advantageous in enhancing a Product Layout on the same webpage. I have not discovered any work around to transform a Product Layouts into Category Layouts.

Yes, you are right. We are working on it ( change H tage ). This is very important for SEO. And this feature will come very soon.
Additionally, This is not possible to change category layouts using this plugin. But the good news is that another plugin is coming soon for category layouts.
