How to change the structure of a site without altering indexing

Hi folks,

a client has asked me to redesign their company site using a different theme and changing the information architecture (mainly moving two sub pages to main menu pages) on the same hosting space and domain as the site currently online.

The content of the site would remain the same, mainly the design would change. By necessity we would have to go and change the theme and recreate the site from scratch.

My question is: what should I do in order not to alter the existing indexation? Should I leave the sitemap.xml file on google search console pre-existing and will Google update it? Or update it by manually deleting the pre-existing one on google search console? Thank you very much for your support.
