I understand that changing the thousand separator settings is not taking effect on your product’s prices.
This could be a caching issue. As a first step, please make sure to clear your browser’s cache, and to flush any caching plugin on your site.
If that doesn’t help, kindly share a copy of your site’s System Status. You can find it via WooCommerce → Status. Select Get system report and then Copy for support.

I see you are using Currency: Mi Piace ($), have you added any currency-related customizations to your shop?
It would be good to test this by disabling all other plugins except WooCommerce and on a default theme like 2022.

As I see, the child theme has quite a few overrides for WooCommerce templates. It would be good to check on that.
