I wanted to jump in on this conversation. You are right WP Data Access is a great program but doesn’t do what you ask.
I operate a Website called CanadianHeadstones.com. We do exactly what you want to do by allowing users to submit information via Gravity Forms, then we have another plugin called WP Connect that takes that information and write it to the SQL Table.
Then we use WP Data Access to it’s full potential to display and produce indexes.
You are going to need to utilize other plugins to make this happen. I would not expect the vendor to develop this but i am not speaking for him.

You can definitely use WP Data Access to create data entry forms for back-end and front-end usage!

Running your data entry forms on the back-end is as simple as making your data project available from the menu. You can make forms available for non admin users as well. For front-end usage you can use shortcode wpdadiehard. Here is a demo:
Premium users can also use Data Forms, which converts a Data Project into a responsive web app. An inline demo can be found here:
Please note that the demos are read-only. Enabling edit mode is all you need to make these forms enterable.
