When let’s say you are overhauling a website and some articles are no longer have the original URL but a different URL, why does one need to create 301 Redirects ?
Doesn’t the google crawl engine crawl the new site anyways within a couple of days ? If the site is crawled again what is the point then with having to set up redirects ?
What am I not understanding ?

301 redirects allow you to pass the authority from your old page to your new page.
To expand on what u/LucidDreamDankMeme said, it’s all about trust, as google calls it, “authority”. A new URL is not trusted (in Google’s eyes) compared to a URL that has existed for a long time. A 301 can essentially transfer trust from the old URL to the new, which is a critical part of moving a page or domain in order to maintain your SERP ranking.
