I used a theme that a YouTuber made, which though very helpful, unfortunately sneaks in a tracker to his site on *my* site. Most wouldn’t mind but I cannot accept it. Is it possible to delete his tracker from my site, or so I have to start all over again and just build my own theme (via Elementor)?

The tracker is probably embedded in the code and removing should not be very hard, however, you need to know a bit about how themes and functions work in order to remove it properly.
