  1. There are many ways to approach this.

    The easiest (IMO) is to create a staging version of their site (most hosting services support this out of the box) and work from there. Once the client has approved the new site, you can push it to the live site.

    If you are keen on building on your own site (subdomain) you can do that and use a migration plugin like All in one WP Migration to move the site from your subdomain to their site once you are done.

    You should probably do some trial migrations from localhost to a live host of your own a couple of times to be familiar with the process.
