I do freelance and for X reasons I will not be able to deliver a project to a client on time. He wanted a WooCommerce store and I started searching for a theme on Themeforest and found one that’s similar to the one my client wants and I’m considering purchasing this theme and then sell it to my client as if I made it and take the money. Should I do this? Has someone done this before? Is it okay to do so?

That is not ethical at all.
Thousands of devs do this. It’s how Theme forest grew so huge.
It seems you want to do it, regardless of any opinions/comments here.
So why not just do so, and after experiencing how it feels, you may inform the client about the facts. 😅
