As someone who’s paid for and enjoyed premium themes in the past, are there any real benefits to paid themes when it comes to FSE compatible block themes?
The only thing I can really think of would be patterns to make the building process faster along with bundled plugins but that’s it.

Faster? Seems a non issue. A keen eye for uix, is more important.
Depends, some developers include specific things in it like eCommerce compatibility, extra speed, more breakpoints etc
