I’m pretty good with WordPress but not sure how to update this website I just took over. It uses an old version of Qode Interactive’s Bridge Theme, also has Elementor and WP Baker Pagebuilder. So, when I open a page to edit it, it’s built with Pagebuilder, not blocks and is a mumbo-jumbo looking page (see attachment). My question: how do I turn all of this into a “normal” worpresss, Gutenberg site? Do I have to rebuild everthing from scratch? Any advice is appreciate, and if I’m in the wrong place let me know. Thanks!

There’s a good chance only one of the builders was used to create all the pages, so you might be able to uninstall the other one. You need to ensure that theme is kept up to date – it uses a bunch of plugins that have frequently security problems.
If you want to use Gutenberg, my advice would be to rebuild the site from scratch. Bridge is an extremely bloated theme.
