I was having issues with images not appearing on our website, (white/blank) after troubleshooting some possibilities, I deactivated the Smush plugin and that seems to have fixed the issue. When I reactivate the issue comes back. Does anyone know what could be the problem? Do I need that plugin or is there an alternative? Is there a feature that I need to disable? I noticed an error saying that it may have issues since we also have WP Rocket. Any insight is appreciated. Also, not all images were having issues just some.

You do not need that plugin.
You can use optipng + jpegoptim. and ditch smush plugin.
like others have said, ditch smush. The lazyloading setting routinely conflicts with WP Core lazy load. (this is why you have blank/missing images) Disable one of them, but mostly, ditch smush.
Smush and smush pro are beginners mistakes, not only that but wveythibg gets compressed to 80%.
I use photoshop to save my images in WebP format and I have CONTROL on how much compression to use.
Sometimes I can get away with 70%. Other times, I need 88%.
