I'd like to be able to write my blog posts like I would write up a document in Word or Google Docs. The built-in editor (Gutenberg?) Just doesn't seem to have all the formatting options. Pressing ENTER gives me a big space vs a new line for paragraphs. Cutting and pasting doesn't appear to be well, especially with tables.
What can I do for a better editor?

You can enable Classic Editor.
Go to plugins and search for it. It will enable WordPress Editor which was before this Gutenberg.
If you just want to start a new line without starting a new paragraph, then press Shift + Enter. The Gutenberg Editor is OK. I cut and paste huge portions of pages and it never fails.
My annoyance is that highlighted text doesn’t delete on the first try but …. other than that, it’s decent for what it is designed to do.
