Theme attributes versus plugins?

Trying to get this more clear for myself: since a lot of elements, from galleries to archives to thumbnails, apparently are available as plugins: what is the main thing to focus on when picking a theme, like which attributes are inherently part of the built and less easy to add/change as opposed to things that can always be added later with plugins? Because currently I tend to look for a theme that already looks the most like the design I have in mind but I’m not sure if that’s the most practical way to go about it?
