A client of mine has a small website with five pages. They would like to change this over to a one-page layout. Before I rebuild the page by hand, I thought there has to be a theme built to do this, but I haven’t found one. Does anyone know of an automated way to covert to a one-page?

Nope. Unfortunately you’re going to have to manually create one page.
That’s not how it works.
Depending on whether they used a page builder you might be able to save all the rows of each page to a library, and then drag them onto your new page.
