@pcdokterbreda I don’t think this is an issue with the plugin because such issues were resolved in earlier versions – and even so, it would only ever be a day out rather than two.
Have you checked your page cache specifically? You may need to clear this to get the current “today”.
If that doesn’t work, please use the following to clarify what is “now”?

There is something that will work around caching, with an immediate AJAX call:

No, my page cache recycles every night. And I have removed it manually too to update the page and set the We are open text manually.
I added the %today% and %now% values to the linked page.
Today: Zaterdag Now: 16:38
As you can see it reports as Saturday.

@pcdokterbreda After your super-helpful email correspondence, we figured it was the PHP version. Once you restored it to 8.0 and cleared the cache, the issue went away.
This plugin is only tested fully up until PHP 8.0. If you are using 8.1, there may be some unexpected results.
I do have this listed as an 8.1 bug for now and I’ll resolve it as soon as possible.
