Looking for suggestions on plugins or themes or page-builders that would allow me to display different headers footers and menus for different woocommerce product categories. Any suggestions appreciated!
Ideally I’d still like to be use Gutenberg but if that isn’t an option thats fine too.

I just started using Kadence. Has all of the features you listed… but of course they come in paid bundles :’( Not sure if you’re wanting a totally free solution. Also, have noticed a considerable difference in editing and page load with Kadence… even though I could pull my hair out with the UI. But hopefully once I learn it more, it will be great. I was so adamant on not learning the block system, but now that I’m diving more into it, I can see why some if not a lot of people grow to like Gutenberg.. the speed difference alone is night and day.
There’s also Bricks which I really like, but not as drag n drop. Breakdance, and of course Elementor.. the easiest page builder out of the box in my experience… but sooooooo slow when I installed Woocomnerce and started adding products.
