Updating a Client Website for a Redesign?

Hi, so I have used lots of different tools in the past to update clients and their websites. In the past, I would have a working version of their main website up, but I would have sub-pages that would be in progress design work. (So using old stuff until I get new stuff up).

But this is the first time that my clients have used wordpress. Though it is not my first foray into wordpress… So a couple of key questions:

1. Is there a way to update the theme of the website and preserve the older pages so that the live version is not different? Currently my client has a theme that isn’t particularly working out for them. I found a new one that works perfectly for their needs and I just want to customize certain pages to better fit their needs.
2. Would this disrupt their current website if I switched themes, how do I store them or do I create a website on my side? Is there a tutorial on this

This is not my first website design, but it is my first redesign. I am still in the baby stages of learning the tools, but I am at least two years in, but I have a full degree. In all previous projects, I’ve usually had to work from scratch. Or they switching over from WordPress, or to WordPress. and I usually kept up the website before transferring it over. This is the first time I’ve had a live website to work around.
