Hello,
I’m trying to create a page with a pdf document where a user can type their details into the document, provide their email, then download that pdf to the user. Is there a plugin, or a mix of plugins that would accomplish this?

Not a plugin, but I have used [this]) for creating PDF’s dynamically. Within wordpress.
You can do this – almost – with Fluent Forms, Gravity forms – and possibly others. I have Gravity – which isn’t as user friendly to use for this job. With Gravity you have to create a PDF template (in a kind of hybrid of HTML/XML – though there are good guides). Then you use a form to take the details and it puts those details in the PDF and can email it anywhere.
With fluent there’s a more visual builder for the PDF.
Either way, the user fills in the form, not the PDF directly – and the PDF is then generated and emailed.
