You can display the tax totals broken down by selected the Itemized option in the Display tax totals setting, under WooCommerce > Tax:
…then the tax rates will be itemized in the total’s area, if you have more than one tax rate:
Please note that with the Premium Templates extension, you can use the customizer and tailor your PDF documents, without depending on the WooCommerce tax settings.
