Why do I have to edit the template instead of the page?

I guess you are probably using a block theme. Twenty twenty four, probably.
You define what’s your homepage on settings > reading.
It defaults to the homepage template if you don’t assign a page.

For a single page site you can edit the template, it makes no difference. Just that it won’t show on your pages dashboard.
