Woocommerce theme should I Use pre-build or develop it from scratch?

"Hi everyone, I'm new to WordPress and need advice on choosing a WooCommerce theme. Is it better to go with a pre-built theme or develop one from scratch to fit business needs?

My key requirements are:

  • Website performance
  • SEO
  • Responsiveness
  • Customization to match my design language

I've been learning WordPress (hooks and filters) and have a Python background, though not in web dev. The business has around 500 products in 10 categories, with 90k MAUs and spikes up to 130k in some month.

What do you recommend? Also, if you've worked with pre-built themes, which do you suggest? If you’ve developed custom themes, what stack did you use? (I’ve briefly worked with Bootstrap.) Thanks!
