It is generally safe to update plugins, but we recommend establishing a safe routine when performing any update to your site. This includes creating a backup of your site, making sure that the theme and plugins are all updated before updating WooCommerce, and testing your site after updates to make sure the store and checkout works as expected. If you see an issue you can roll back to your backup and try to update in smaller increments by accessing older versions in the Advanced View of the plugin page (scroll to the bottom for older versions).

From version 5.5.4 to 6.8.0 is a fairly big version jump, so testing would be good before updating the live site – especially if you have a lot of plugins. If you have a staging site available I’d test the updates on there first. If you don’t have a staging site and can’t create one, you can test on your live site after backing up. In that case I suggest setting up a maintenance period where customers can’t place orders in case you need to roll back after updating. Then you can re-enable your shop for normal business once you are satisfied everything is working.

Note that since WooCommerce 4.0, WooCommerce Admin is bundled with WooCommerce – you don’t need the WooCommerce Admin plugin for that functionality. The standalone plugin is only needed if you want to test the newest features in that plugin; versions older than the bundled version are ignored on your site.
