I have a fillable PDF form that I would like to make as easy for visitors to my site as possible. It’s a rather busy and complex form, so remaking the form in Contact Form 7 or similar would be quite a nightmare. Is there a way that I can host that form directly on my WordPress site and have users fill it out and then it sends me (and possibly them as well) the result?

yes, but you need to put field names and a target URL for submissions in the PDF file
