I want to sell websites to peoples absolutely out of the digital world, to push their visibility with a website.
In your opinion, do you think that using templates is a good thing ? to build entirely their websites ?

Yes it’s perfectly fine. Templates (or themes in this case) are just a tool. Use the tools you have available to you and *where necessary* customize those tools to your clients needs. Most people won’t know nor will care if you use or started with a pre-designed template because clients are nearly entirely focused on the end result. So long as it looks how they want, functions how they want, and provides the services they require out of a website for the cost they are paying they will fine with the end result.
