I have the original Studiopress package and using the Magazine Pro theme before they sold there company, and they never bothered to do an update that fixed the Core Web Vitals menu shift issue on mobile. Im so used to this theme since ive had it for over 10 years because it had so many things built in that was easy for me to use. Should I just change my theme to Generate Press since its the one ive been recommended and use one of their free templates since Studiopress wont fix the issue with their menu in mobile?

Unfortunately its just not a good theme (like most ThemeForest themes). You could probably get the rank higher with some custom code but depending on their code it could be quite complex.
Should you tranfser to Generate Press or another theme? That really depends on how much content you would have to manually redo. You should experiment in a development enviroment.
Most competent hosting providers have staging options which basically makes a copy of your current site under a subdomain like [staging1.yoursite.com]). You make all your changes there until you’re ready to replace live with staging.
