As a preface, I am fairly well-versed in WordPress and Elementor. I have built three websites without issue prior to this.
I have purchased and downloaded the Houzez theme from Themeforest based on reviews and assumed ease of building.
I have the theme and the child theme downloaded and the child theme is active. I go to the theme options and add all my logos and favicons to the appropriate areas in the options panel. Hit update, and nothing changes. It all stays the generic Houzez logos, yet it shows that mine are uploaded.
I have also tried to change the site identity in Elementor, too. Nothing changes there either.
Is it me, or is this theme VERY confusing to use as far as branding changes are concerned?
I am open to any suggestions, prior to requesting a refund and finding a different theme that actually works and has good support.

Have you cleared all cache. Regenerated files in Elementor?
And maybe better to use Hello theme so you can buildit the way you want with Elementor?
And maybe you can find an answer in r/elementor
Try clearing your browser cache.
If I recall it correctly there are several logos you need to change on the settings. Somewhat in line if logo, retina logo, mobile, mobile retina, dashboard logo etc. Just change em all
