I’m currently using “RawOrganic” theme for our website but I couldn’t figure out why the options I’ve got to customise our new site is limited, unlike what we had in the old website:

I can’t even change the website header so what is missing here? Is it additional plugins or something to do with the theme settings?

Old site’s theme templates has custom functions built into it that modified the appearance page. I hate theme templates for this very reason, every experience is different.
Personally I’d recommend a theme builder like Divi or Elementor so you have more control. It could also be that the theme you’re using does use a theme builder and you haven’t installed it yet. Check RawOrganic’s support page to see if it uses either a theme builder or builder framework.
Typically when installing a theme, there will be a section of the theme’s options that tell you what plugins are needed, and links to install them. If you’ve already begun designing the site, skip anything that says “import demo” or “import demo content” or similar, as it could overwrite whatever you’ve done to this point.
